Charleston, South Carolina—November 2005 will be the grand opening of
The Gourmet Studio in Charleston, South Carolina, a recreational and professional
cooking school
founded by Chef Marcel Massenet. Marcel brings a wealth of
culinary knowledge to the school through his lifelong experience in
pastry arts all over the world.
Marcel started his pastry arts experience with an apprenticeship in
Normandy, France. Upon completion of his apprenticeship he worked
in bakeries in Paris and for Club Med in Switzerland, Sardinia, and
Guadeloupe. He traveled to Australia and owned and operated a
pastry shop in Sydney. Since his arrival in the U.S. in 1974, he
opened a European bakery in western Massachusetts and held several
positions in Washington, D.C. including a stint at the Watergate Hotel.
In 1982 Marcel moved to Charleston and worked as a pastry chef at
several area businesses including Kiawah Island Resort where he managed
all the baking and pastry production. In 1988 he and his sister
opened a downtown bakery, Normandy Farm. In 1990 he started a
second career as a full-time baking and pastry instructor at the
Charleston Campus of Johnson & Wales University and held his
position until the campus closed its culinary program in 2005. As
an instructor, Marcel was always praised by his peers and students for
his teaching techniques and dedication to his students.
During his career he has received many professional awards though the
American Culinary Federation and the Retail Bakers Association.
He now holds three professional certifications, executive pastry chef,
culinary educator and RBA certified
Master Baker.
He is excited about opening The Gourmet Studio and looking forward to
sharing his talents with the Charleston community and culinary
professionals. He wants the courses to be recreational courses
for nonprofessionals and professionals.
The first class offerings for The Gourmet Studio will include baking
and pastry classes from beginner’s level to more advanced
courses. Wine tasting classes will also be among the first
courses offered. Kathy Hawkins will teach these courses.
She most recently was a Maitre d’Hotel Associate Instructor at
Johnson & Wales Charleston Campus from 1990 to 2005. Kathy
has a passion for wines and an enthusiasm for teaching that audiences
will find engaging. She was endearingly called “Hawk”
by her former students because she does not miss a beat when it comes
to dining room service. She has a way of simplifying the most
complex concepts into terms her students can easily relate to then
apply that knowledge. Some of her additional qualifications
include: Level One Master Sommelier, Certifed Hospitality
Educator, and Fifth Year Certified Trainer for Training Intervention
Procedures (TIPS). TIPS training covers the rules and
responsibilities of selling and serving alcohol.
Classes will be offered at a variety of times so that everyone who
wants to participate in them will be able to fit them in their
schedule. The course schedule will soon include additional
culinary courses taught by other notable instructors. The Gourmet
